It is a great start to 2012 except for the fact that I am already sick. A wonderful cold complete with stuffy-runny nose, cough, and congestion. I am miserable right now on my weekend off of work, and all I want to do is go out and have some fun.
After a long day of work on Friday all I could think about was going home to a bowl of soup and some hot tea. So that is exactly what I did. For dinner Friday night, Chicken and Dumplings.
I had never made Chicken and Dumplings before and I know it can be a process. So in an attempt to not spend my entire evening in the kitchen, I took the cheaters way out. Instead of making homemade dumplings, I bought Low-Fat Buttermilk Biscuit dough; instead of cooking my own chicken in water and broth, and I bought a pre-cooked rotisserie chicken. The soup was completely wonderful, but next time I will take the time to make everything from scratch.
The soup was easy to make, and nearly impossible to mess-up. After making a mirepoix (carrots, onions, celery, and garlic in olive oil), I added thyme infused reduced-fat chicken stock and water. The soup came to a rolling boil and a roux was added to thicken the stock. Then , the chopped chicken.
The cut biscuits were gently placed on top and I sprinkled them with a hint of pepper and smoked paprika. The lid was placed on-top and the steam magically transformed the biscuits into giant balls of fluff. They actually took over the soup, ha!
So comforting and delicious, now I just need to get rid of this evil cold.
