Spreading Some Good Karma


If you are an avid reader of my incredible writing you know that I enjoy eating vegetarian quite often.
However, I never could have imagined food from a truck to be the most amazing vegetarian food that I would eat.  While I know many people have issues with eating from a food truck, not sure why, I on the other hand find nothing wrong with it.

A few weeks ago the hubs and I discovered Good Karma Kitchen , an insanely delicious veggie truck serving gluten-free lunch.  I was in the mood for a light lunch on a blistering day so it sounded like the perfect thing.  As we pulled-up to the truck we were surprised to not find a crowd; but rest assured they get the big crowds quite often.

Good Karma changes their menu daily but what we had on that hot Sunday afternoon could not have been better:

Heart of Palm Tostadas & Asian Tofu Tacos…

The tostadas were very light and refreshing with black beans and layers of vegetables and citrus; including heart of palm of course.  Hands-down the hubs and I agreed the Asian Tofu Tacos were best…delectable that is.  The tofu was like no other tofu I have ever had…it was actually good. Ha!  The tofu was in tiny- slightly crunchy-curls with a big Asian bite to it.  The spices were mouthwatering!  I REALLY wish I could make these at home but I have no idea what is actually in them or how the dish is made.

I have been dreaming about Good Karma since we had it a few weeks ago, lucky for me they will be back in my area this weekend.  Yum!
